Eton Mess Recipe

  1. Break up some meringue or pavlova into individual dessert bowls.
  2. Add one or more of these to it :- custard, your favorite yoghurt, whipped cream.
  3. On top of it all toss on one or more of these fruits:- banana’s, blueberries, passion-fruit and pomegranate are our favorites.

Use quantities of each to suit i.e. amp up what you consider to be the healthy ingredients, which these days will be different depending on if you are Paleo, diabetic, vegan, gluten free, dairy free etc.  At parties, lay out all the ingredients and let people choose their own.

Regardless of how healthy it is, don’t live on it.  If it’s all too yummy to leave untouched when you are at home alone then only make it for times when you can share it.

Less Sugary Options

  1. You can make 3 dozen (36) meringue using just ¼ cup of sugar! and you could also As-Sweet Stevia if that’s not sweet enough for you, but it will be – epecially when you add fruit.  The sugar is more about it ‘holding’ the meringue together nicely.  If you want squishy centres just add a vinegar and cornflour.  You can also make them in the microwave says Google
  2. When buying pre-made meringues and pavlova choose ones with lowest sugar content and/or even easier just sprinkle the meringue on the top at the end, instead of using a whole chunk at the bottom of each bowl!
